wide rear wheels?

Ok so I did a 5.0 swap in my e30 a couple weeks ago. Fuel injected from 89 mustang and t5 trans. Running good as of now and just need to finish the wiring for dome lights and stuff. Now I'm trying to find some new rims. Doing fiberglass flares and going to roll them and build them out like 1" or 2". Will just see how I like it once I start mocking it up. I want to find a set of rims that will have the right offset and width to stick out like 2" past the stock fenders at least but I only want them to stick out in the back. I want 9" or possibly 10" tires in the rear. I want the rims for the front and rear to match obviously but I don't like cars where the front wheels stick out at all so I want like 6" tires in the front. Was looking at these rims.

What offset and width should I be looking for? Anyone know a set of rims that look like those that you can select the offset or rim width? Thanks!

Also, I have 17" rims on it now. Would like to keep it 17" or 18". Have a good amount of clearance with stock suspension. Planning on dropping it 1" and calling it good.
