Engine care whilst head is off for a few months?

Going to get around to rebuilding my M30's head soon, the only technical difficulty being no space in garage to put the car so she'll be stored (under a car cover) outside for the entirety of the operation. Even if it was garaged I expect that leaving the head off (and thus not running the car for some time) may require some "special" maintenance. What would you guys recommend I do whilst the rebuild is taking place to ensure that nothing is damaged & everything goes back together well? I was thinking of oiling the mating surfaces of the block and cylinders & turning it over every few weeks to prevent rust. Anything else?

Also since I'll be rebuilding the head is it worth pulling the whole engine out & keeping it on an engine stand to clean it up and replace anything that needs doing out of the engine bay? I know I have to do the pan gasket so if I'm take the head off is it worth it to pull the whole engine, stick it on a stand and give it a full once over out of the car to change the pan gasket and assess wear orrr is that just making a hell of a lot of extra work?
